
all cred to my wondrous cousin for this delicious recipe!!
2 tablespoons extra virgin olive oil
1 head cauliflower cut into chunks
1 onion medium dice
3 garlic cloves roughly chopped
2 teaspoons fresh thyme
2 cubes vegan vegetable bouillon [[no salt added]]
1/3 cup raw cashews
4-5 cups low sodium vegetable broth [[should be enough to cover cauliflower + 1 cup]]
1 squeeze of siriracha/siriracha type hot sauce
1/2 lemon juiced
salt and pepper to taste
a few tablespoons of finely chopped fresh chives
truffle oil
croutons/lightly toasted chopped nuts to top
heat a soup pot over medium heat. add oil and onions and saute for 3-5 minutes
add bouillon cubes, sriracha, thyme, and garlic plus a little salt and pepper. cook for 2-4 minutes until bouillon is disolved
add cauliflower, cashews, and veggie broth
bring to a boil then bring down to a simmer, cook for 15-20 minutes [[until cashews are soft and cauliflower is cooked through]]
in small batches blend the shit out of it in a vitamix/super powerful blender, adding more broth if it’s too thick
mix in lemon juice and season with salt and pepper
portion the soup out and top each bowl with a little truffle oil, chopped chives, and nuts/croutons
enjoy that soupy deliciousness with wine and french bread!
