  1. bombastic breakfast bagel

    1 onion bagel

    1-2 spoonfuls vegan mayo

    1 spoonful yellow mustard

    3-4 slices tofurky (i suggest peppered)

    1 slice vegan swiss or provalone cheese (i suggest daiya)

    (not on my sandwich because i’m sadly out but suggested: 4-5 avocado slices)

    toast your bagel until desired level of crunchiness is achieved

    spread on mayo, then mustard. top with tofurky, cheese, and avocado if using.

    put two halves together, and nom your beautiful vegan face off

     
     
  2. vegan cheesy bread AKA the greatest high meal i have ever eaten

    1 large piece of pita bread

    1 large pinch garlic powder

    1 big handful daiya cheddar shreds

    1 big handful daiya mozzarella shreds

    1 big old glob of vegan ranch dressing [[homemade or store bought, both good it just depends on how lazy you are]]

    cut pita bread into slices, top with a very thin layer of garlic powder, then a layer of mozzarella, then cheddar

    microwave on high until cheese is melted, about 1 minute

    dunk in vegan ranch and eat this shit up, even though it’s ugly as fuck! 

     
     
  3. delicious [[gluten free!]] cauliflower soup

    all cred to my wondrous cousin for this delicious recipe!!

    2 tablespoons extra virgin olive oil

    1 head cauliflower cut into chunks

    1 onion medium dice

    3 garlic cloves roughly chopped

    2 teaspoons fresh thyme

    2 cubes vegan vegetable bouillon [[no salt added]]

    1/3 cup raw cashews

    4-5 cups low sodium vegetable broth [[should be enough to cover cauliflower + 1 cup]]

    1 squeeze of siriracha/siriracha type hot sauce

    1/2 lemon juiced

    salt and pepper to taste

    a few tablespoons of finely chopped fresh chives

    truffle oil

    croutons/lightly toasted chopped nuts to top

    heat a soup pot over medium heat. add oil and onions and saute for 3-5 minutes

    add bouillon cubes, sriracha, thyme, and garlic plus a little salt and pepper. cook for 2-4 minutes until bouillon is disolved

    add cauliflower, cashews, and veggie broth 

    bring to a boil then bring down to a simmer, cook for 15-20 minutes [[until cashews are soft and cauliflower is cooked through]]

    in small batches blend the shit out of it in a vitamix/super powerful blender, adding more broth if it’s too thick

    mix in lemon juice and season with salt and pepper

    portion the soup out and top each bowl with a little truffle oil, chopped chives, and nuts/croutons

    enjoy that soupy deliciousness with wine and french bread!

     
     
  4. pistachio pesto pasta party

    3 - 4 giant handfuls fresh basil leaves

    approximately 2-3 large handfuls shelled pistachios

    1/3 cup olive oil [[add as much in after as you need, this is just a starting point]]

    3 or so large garlic cloves

    salt and pepper to taste

    put everything but olive oil in a food processor and process the hell out of it. add in the olive oil slowly, along with the salt and pepper.

    when it’s the consistency you want, taste it and adjust as needed

    serve on pasta with veggies!

     
     
  5. new favorite stir fry

    1 package extra firm tofu [[can be plain or any savory flavor, i suggest a flavored one for this]]

    1 medium head broccoli cut into chunks

    2 servings stir fry rice noodles

    2 cloves of garlic minced

    roughly 1/3 red onion finely chopped

    6-10 baby bella mushrooms cut into halves or quarters

    1 avocado cut into chunks

    olive oil

    salt and pepper to taste

    cook noodles according to package instructions

    wash and cut all of your veggies

    heat oil in a wok and put in onion, sauté until translucent and fragrant, about 2-3 minutes

    add in mushrooms, top with salt, and sauté for about 2 minutes

    add in garlic, broccoli, and tofu, sauté for about 1 minute then cover, only uncovering to stir every once in a while, for 7 or so minutes.

    add in noodles, stir and cook for 1-3 minutes, until everything is fully cooked.

    serve!
